Quick Chicken Cacciatore

Ingredients:

  • Nonstick cooking spray
  • 4 skinless, boneless chicken breasts, cut into 1-inch strips
  • 1 (28-ounce) can diced or crushed tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 large green pepper, chopped
  • 1 medium onion, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley or 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Spray a large skillet with nonstick cooking spray. Preheat the pan over medium-high heat. Add the chicken and onion and cook, stirring, for 3 to 5 minutes, or until no longer pink. Reduce the heat to medium. Add the tomatoes and their juice, tomato sauce, green pepper, oregano, basil, parsley, salt and black pepper. Bring to a boil; reduce heat and simmer, covered, for 10 minutes. Serve over rice or pasta
