| Mexican Salad
One of our loyal readers, Donna, sent in this delicious recipe. This dish is one of those super easy recipes that is absolutely yummy! To really blend the flavors, prepare a day ahead of time.
Ingredients:
- 19 oz can Red Kidney Beans
- 19 oz can Niblets Corn
- 1 red pepper, cut into strips
Spicy Dressing:
- ¼ c light oil
- 2 tbsp soy sauce
- 1 tbsp lemon juice
- 1 garlic clove, minced
- ½ green pepper, diced very fine
- salt and pepper
- chili powder, to taste
Method:
Combine all ingredients and enjoy!
