- Lentil Salad

- Taken from my mother-in-law's
recipe book, I'd like to share one of my favorite Colombian dishes.
Serve this as a side dish to a lovely September picnic!

- Ingredients:
- 1 bag dry lentils
- 1 tomato, chopped
- 5 green onions (scallions), chopped
- 1 onion, chopped
- 1/2 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 1 tbsp Adobo seasoning from Goya
- 1 packet Sasson seasoning from Goya

- Method:
1. Cover lentils with cold water and
bring to a boil in a saucepan.
2. Cover, and simmer gently for 1 hour or until the lentils are tender
but not mushy.
3. Drain, and let lentils cool completely.
4. Mix the rest of the ingredients in a separate bowl. Add the lentils
and toss.
5. Serve well-chilled.
