    Simply irresistible recipes

     

    Lentil Salad
     
    Taken from my mother-in-law's recipe book, I'd like to share one of my favorite Colombian dishes. Serve this as a side dish to a lovely September picnic!
     
Ingredients:
 
1 bag dry lentils
1 tomato, chopped
5 green onions (scallions), chopped
1 onion, chopped
1/2 cup fresh cilantro, chopped 
1/4 cup olive oil
1 tbsp Adobo seasoning from Goya 
1 packet Sasson seasoning from Goya
 
Method:
 
1. Cover lentils with cold water and bring to a boil in a saucepan.

2. Cover, and simmer gently for 1 hour or until the lentils are tender but not mushy.

3. Drain, and let lentils cool completely.

4. Mix the rest of the ingredients in a separate bowl. Add the lentils and toss.

5. Serve well-chilled.
