Slow-cooked Apricot Pork Chops
- 4 center-cut boneless pork chops
- ½ cup dried apricots, chopped
- ¼ cup apricot preserves
- 2 cloves of garlic, minced
- 1 tbsp Dijon mustard
- 2 tbsp honey
- ½ tsp salt
- 1/8 tsp white pepper
- 2 carrots, sliced
Place all ingredients in 3- to 4-quart slow cooker, cover, and cook on low for 8 hours or until pork chops and carrots are tender. Serve with hot cooked rice, couscous, or pasta.
