Mary Pat Rushton of Canada sent in a favorite recipe of hers.
"I have a favourite recipe that I can share -- it was given to me by a good friend many many years ago (almost 40 now) and I've used it soooo many times, I can't count. It has become a staple at our Christmas dinner -- using RED Jello powder; at bridal and baby showers (coloured with whichever Jello matched the decor) and is a hit at Pot Luck dinners or lunches (no one can ever guess the ingredients! I have no idea who Betty is, but I am very thankful to her for hew wonderful fruit salad." Mary Pat

Fruit Salad
- 1 container of Cool Whip (regular, lite or low cal all work) or other equivalent whipped topping
- 1 large (about same size as Cool Whip) container of cottage cheese
- 1 pkg. of Jello powder or other brand equivalent. NO WATER is added to the Jello powder/crystals, just the crystals are used, and the type of Jello chosen determines the colour of your salad -- for Christmas I use Cranberry, Cherry, Raspberry, or Strawberry -- St. Pat's day I use lime -- Easter usually Lemon or Peach .
- 1 small tin of mandarin oranges (drained)
- 1 small tin of pineapple chunks or tid-bits, depending on the size of fruit bits you want (drained)
- 1 small tin of fruit cocktail (drained) - I like the "Very Cherry" type
None of the fruit juices are used, but I generally buy the "packed in water" or "packed in fruit juice" variety -- your choice. The leftover juice can be drunk as is or use in mixed drinks for a little different twist . You can basically use any fruits that you like, just make sure they are in bite size pieces. Make it as "fruity" as you like by adding more or less.
Mix everything together in a bowl until the colour is spread throughout and there are not "white" spots left.
Refrigerate for 1/2 - 3/4 hour before serving to let the flavours set.
