Lentil Soup with Ham (Serves 6)

This recipe is great and cooks in just one hour!

INGREDIENTS:

2 pork chops with bone
6 cups of Nature's Promise low sodium chicken broth
1 1/2 cups dried lentils
2 cups sliced carrots, diced
1 cup chopped celery
1 cup chopped onion
1 tsp salt
1 tsp sugar
1/4 tsp pepper
3 bay leaves

PREPARATION:
Sprinkle pork chops with salt & pepper, brown in olive oil until almost cooked through but don't overcook because they'll finish cooking in the soup.

In a stock pot or large kettle, combine chops, water, lentils, carrots, celery, onion, salt, sugar, pepper and bay leaf. Cover and bring to a boil; reduce heat and simmer for about 1 hour, or until lentils are tender.

Remove pork chops. Chop meat and return to lentil soup. Remove bay leaf.

Note: Cook the pork chops in the same pot you will cook the soup in; when the meat is done cooking leave it in the pot and just add all other ingredients.
